1 box whole wheat Rotini noodles
1 red pepper, cut in 1 –to-1 1/2″ pieces
1 yellow pepper, cut in 1 –to-1 1/2″ pieces 1 eggplant cut in 1 1/2″ chunks
8-10 cloves garlic, peeled
1 zucchini, cut in 1 1/2″ rounds
1 -8oz pks mushrooms, wiped clean & cut in quarters
Juice of 1 lemon
2 Tbsp olive oil
1 Tbsp basil
Salt & pepper to taste
Grated parmesan cheese (optional)


  • Place all vegetables in baking dish
  • Add olive oil & toss veggies to coat
  • Add lemon juice & seasonings & toss again
  • Bake at 375 for 30 minutes until veggies tender
  • Meanwhile, prepare pasta as per package directions but when ready, do not drain.
  • Remove from Pot with a slotted spoon & place directly in baking dish with veggies.
  • Add 1⁄4 c. of the cooking liquid from the pasta
  • Toss all together to coat
  • Serve
  • Top with grated parmesan, if desired
