Soccer Suppers

I have been asked to provide some easy to prepare & digest meal ideas for quick pre & post game suppers.  Whether it’s soccer, baseball, football or both, everyone seems to be on the run to some activity or another and supper is something to get out of the way, although it needs to make sense with work, school and camp schedules as well as with bedtime.  Some of the following ideas are meat-based while others are not.  If you are feeding your gang post game, you may consider a lighter option as it will likely digest easier before bedtime.

Before making my meal suggestions, I will highly recommend the purchase of a panini maker, George Foreman grill or some form thereof.  these machines are not just for panini but you can grill boneless chicken breast in about 6 minutes and burgers in about 8.  Grilled veggies are a zip and can be used in pasta, salad or an egg-based frittata.  This machine is a mom’s best friend and a Mommy-Must-Have in my books.

Here are some ideas for you:

Meat  & Poultry:

Shish Taouk Chicken with side salad

Teriyaki Chicken Stir Fry ( buy chicken already cut in strips)

Hamburgers with oven fries & salad

Turkey Sandwiches & Salad

Meatball Subs (your favourite meatballs in a hollowed-out whole wheat baguette topped with shredded lettuce & veggies…mmmm)

Sloppy Joes

Dairy:

Lemon-Dill Tuna Salad Sandwich

Egg Salad Sandwich

Cheese Blintzes or Cheese Bagels

Panini & Salad

Pasta & Sauce

Steak-Spice Salmon with Quinoa & edamame

Breakfast for dinner:

Whole Wheat ChocolateChip Pancakes

Whole Wheat Waffles

French Toast

Eggs- any style with toast & fruit or veggies
