Asparagus (Baby Food)

INGREDIENTS

  • 1 lb. fresh asparagus, washed, trimmed, cut into 1″ pieces -or-
  • 1 lb frozen asparagus, broken in halves
  • Water

METHOD

  • Place asparagus in saucepan with water to cover
  • Bring to a boil
  • Reduce heat to medium & allow to simmer 20 minutes or until fork-tender
  • Strain, reserving water used for cooking
  • Place asparagus in food processor or blender
  • Process until the consistency is that of a smooth puree
  • If necessary add a bit of the reserved water to bring to desired consistency

Note: Remember that Asparagus results in particularly strong-smelling urine…no need for alarm if you notice this for the following diaper change or two!
