Strawberry Feta Salad

For today’s post I thought I’d share a new recipe I recently developed.  The inspiration came from a watermelon & feta salad that I enjoyed at George’s at the Cove in San Diego.  While I have had watermelon feta salad before and I do make it myself, it was first time having veggies and mint included in the mix. The mint really ‘wowed’ me… I came home and surrounded by both strawberries & tomatoes developed this Strawberry and Feta Salad

2 c. Quartered strawberries
2 c. Halved cherry tomatoes or diced tomatoes (use different colours, if desired)
2 c. Chopped cucumber
1 c. Pitted, halved black olives (preferrably Kalamata)
1 c. Crumbled feta
3-4 Tbsp. Olive oil
3-4 Tbsp. Chopped, fresh mint
Freshly ground pepper, to taste

Combine all ingredients in a bowl. Toss gently but thoroughly.  You may prefer to add some more mint and/or olive oil- adjust to taste.
