Bread Machine Challah Dough

This morning I decided to prepare Challah dough on FB live.  I shared the recipe I use for making challah in the Bread Machine. It is the same recipe for making it in the Stand Mixer, but the order in which the ingredients is added changes.

Here’s the recipe 🙂

BREAD MACHINE CHALLAH DOUGH

Ingredients
3/4 c. lukewarm water
1 egg, beaten ( or 3 Tbsp Aquafaba* for a plant-based version)
3 Tbsp sugar
3 Tbsp canola oil
1 tsp salt
2 1/2 c. flour (I use unbleached)
1 1/4 tsp. yeast

For egg wash:
1 egg yolk + 1 Tbsp water, beaten together ( or 1-2 Tbsp Aquafaba*)
Sesame seeds, for sprinkling

  • Aquafaba is the liquid that you drain out from canned chickpeas.  Drain into a mason jar and keep refrigerated for up to 1 week to use as an egg replacement. 3 Tbsp is the equivalent of 1 egg

Method

  • Place all ingredients (except those for egg wash & sesame seeds), in order given. into bread machine pan
  • Set machine to dough cycle/setting & start
  • When dough is ready (usually 1.5-2 hours later, depending on your machine), remove dough & separate into 3 equal pieces
  • Roll each piece into a thick strip (about 2” in diameter)
  • On a parchment-lined cookie sheet, attach the three pieces together at the top.
  • Braid Challah.
  • Cover challah (still on parchment-lined cookie sheet) with a tea towel and allow to rest 20 minutes
  • Meanwhile, preheat oven to 350°.
  • Prepare the egg wash
  • Remove tea towel, brush Challah with egg wash & sprinkle sesame seeds over top
  • Place in oven & bake until golden brown 20-30 minutes

Hi there – love your site!
Question – I have a bread making machine – I use it to make rye bread, whole wheat, etc…..and the complete cycle takes about 3 ½ hours. I’m trying to understand your instructions here – do I place the dough in the pan and set the timer for 1 ½ hours so that it only mixes/kneads the dough? Any assistance you can give me will be appreciated

Hi! Thanks for the kind words 🙂 The instructions for this particular recipe refer to making the dough on the dough only cycle which can vary by machine but is about 1.5-2 hours on many machines. I then remove the dough and braid/shape as desired. I then cover and allow to rise in a warm place for about 20 minutes- 1/2 hour, brush with egg wash, sprinkle with seeds and then bake in a 350 degree preheated oven until golden brown. Thanks for this recipe! I was searching for challah for a bread machine, but only had fresh yeast. So I tried it anyways, mixing the yeast with the water first, and then everything else. It worked great, including the baking in the machine.(of course it did not look like a challah). I now found dry yeast, which I just tried and again it worked great. However I inncreased everything by 25% to have more dough, and made it like you say only on the dough cycle .Then I separated it into 2 portions for 2 smaller challahs, and baked in the oven. I have also calculated this up to 4.5 cups of flour, the maximum the bread machine can hold, to make 2 larger loaves, only up to the dough cycle (Do not leave this amount in the machine to bake or it will overflow!) But the best part about this was that I used aquafaba as you gave as an alternative, and it works beautifully. I was trying to save my eggs during these times of infrequent shopping, and I absolutely love using the aquafa. A really nice soft and fluffy challah results.
